Why I Love This Recipe

I’m all about a light yet satisfying meal, and this weight watchers chicken salad recipe hits the mark every time. It’s one of my favorite go-to lunches because it’s a WW chicken salad recipe that also doubles as a dairy free chicken salad recipe and a gluten free chicken salad recipe—talk about a triple win! I’ve been whipping this up almost weekly, and it never disappoints.

  • Mixing bowl
  • Measuring cups and spoons
  • Cutting board and knife

Ingredients

  • 2 cups cooked chicken breast, chopped or shredded
  • 1/3 cup low-fat mayonnaise (or vegan mayo for dairy free)
  • 1/2 cup chopped celery
  • 1/4 cup diced red onion
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Optional: a splash of lemon juice for brightness

Method

Step 1: Combine the Ingredients

In a bowl, add your chopped chicken, celery, onion, and Dijon mustard.

Step 2: Fold in Mayo

Stir in the low-fat (or dairy-free) mayo. Season with salt, pepper, and a squeeze of lemon if desired.

Step 3: Chill & Enjoy

Let it rest for five minutes in the fridge. Serve it on whole-grain bread, lettuce wraps, or straight from the bowl!
